Cranberry Orange Bread with Orange Glaze

Quick, easy, TASTY.


This is such a tender, sweet, aromatic quick bread with little pops of tartness from the cranberry, and freshness of sweet citrus. I am all about simplicity, and this is a gorgeous gift-worthy bread that takes little time, effort, or skill. I'll give you regular loaf and mini-loaf baking times. Like I said, what a great gift.


Ingredients


1/2 Cup Sour Cream

1/2 Cup Unsalted Butter (melted)

1/4 Cup fresh-squeezed Orange Juice

2 large Eggs (room temperature)

1/2 teaspoon Vanilla Extract

3/4 Cup Granulated Sugar

Zest from a large Orange

1 1/2 Cups All-Purpose Flour

1 1/2 teaspoon Baking Powder

1/4 teaspoon Salt

1 1/2 Cups Fresh Cranberries


Glaze

1/2 Cup Powdered Sugar (lightly heaping)

2-3 tablespoons Orange Juice

1/2 Tablespoon Orange Zest

Pinch Salt


Directions


Preheat oven to 350 degrees F. Prepare standard loaf pan or 4 mini-loaf pans with baking spray or coat with "goop."


In a large mixing bowl, combine sour cream, butter, orange juice, eggs, vanilla, sugar, and orange zest. Mix until well-combined. Mixture will be quite thin. Don't worry.


In medium mixing bowl, mix flour, salt, and baking powder, then sift into wet ingredients. Mix until just incorporated. Do not overmix. The mixture will now be thick enough to suspend the cranberries without having to coat them in flour.


Fold in cranberries and transfer to pan(s).

Baking time for standard loaf pan is 50-60 minutes or until tester comes out clean. Baking time for mini-loaf pans is 25-30 minutes or until tester comes out clean.


Remove from oven and allow to cool in pan for about 10 minutes before turning out onto wire rack. Cool completely before glazing.


Glaze instructions - Combine all the glaze ingredients and stir until well-combined. For a thicker glaze, add more powdered sugar. For a thinner glaze, add a little water (about a 1/2 teaspoon) at a time until you get the desired consistency.


If you want a little crunch, fold in a 1/4 cup of chopped toasted walnuts or pecans with your cranberries. Always toast your nuts. Take the time. It only takes a minute or two. You'll be so happy.
