Pimento Cheese

A truly versatile and tasty recipe that will make you LOVE pimento cheese!


I love a good recipe that you can play with and adjust to your personal taste, make it your own, and never mess up. That's a perfect recipe. It couldn't get any simpler than this one. I am not a fan of the pimento cheese that one gets in the store with all the processed, gummy stuff. This, however, takes pimento cheese to another level.


I'm going to give you a basic recipe. It'll be fantastic just as written. But do feel free to substitute the cheese blend and spices to get that unique flavor you like! Personally, I love a good cheddar-jack and use a Tuscan Spice blend with a pinch of Cayenne. Find your groove. You'll never look at pimento cheese the same again.


Ingredients


4 Cups Shredded Cheddar Cheese (room temp)

Scant Cup Mayo

Garlic Powder to taste

Black Pepper to taste

4oz Chopped Pimentos with juice


Directions


Mix well in a bowl and chill. That's it. If you like your cheese a little less "long," pulse it a couple of times in a food processor.
