Lemonies

Tired of Brownies?


Tired of brownies? How about some lemonies (or limies - your choice). Easy-peasy and quick.


Ingredients


1 1/2 Cups All-Purpose Flour

1 1/2 Cups Granulated Sugar

1 Teaspoon Salt

2 Sticks Unsalted Butter (room temp)

4 Large Eggs (room temperature)

3 Tablespoons Lemon Juice

Zest of One Lemon


Glaze


1 to 1 1/4 Cups Powdered Sugar

3 Tablespoons Lemon Juice

Lemon zest (optional)

Drops of water to thin if too thick


Directions

Preheat oven to 350 degrees F. Coat a 9 x 13 pan with cooking spray.


Cream butter and sugar. Add egg one at a time and mix until combined. Add in juice , zest, and salt, then add flour to mixture. Mix until well combined, but do not overmix.


Pour into prepared pan, level out, and bake 25-30 minutes or until toothpick comes out clean. Remove from oven and place on cooling rack. Allow to cool completely before glazing or cutting.


For the glaze, measure powdered sugar into small mixing bowl and add juice. then stir. If mixture is too thick, add water abut a 1/4 teaspoon at a time to desired consistence. Glaze should be thick, but not paste-like. Drizzle over brownies and spread with offset spatula. Allow glaze to set before cutting.


Hint: I also put a lil’ splash of vanilla in my batter. I don’t measure, but it’s probably a 1/4 teaspoon.


You can also use lime instead of lemon for something a little different!
